Monochrome Fusion Bistro offers an alternative dining experience for the working crowd – a place where people can unwind and embark on a gastronomic journey of the East and West. Their belief that less is more is reflected in the minimalist, black and white décor, alluding to the Yin & Yang balance they strive to achieve in the dishes.


Monochrome Fusion Bistro offers an alternative dining experience for the working crowd – a place where people can unwind and embark on a gastronomic journey of the East and West. Their belief that less is more is reflected in the minimalist, black and white décor, alluding to the Yin & Yang balance they strive to achieve in the dishes. 

Located just right beside Maxwell Market, office folks working between the Tanjong Pagar and Chinatown precinct can now add a new dining option to their list— Monochrome Fusion Bistro, opened early March 2015. Less is more is the main mantra of the owners and you can see this in the minimalist design of the bistro - mainly in black and white. They believe that these two colours when put together, is timeless and classic. The black and white theme also reflects the Yin & Yang essence of the business - striking a balance of the Western and Asian influence in their dishes, and also hoping for diners to find that balance of work, play and enjoyment in life.

I had the opportunity to try their specialty "White & Black" promotion, starting with the Chicken Mushroom Carbonara. The classic carbonara spaghetti, with a added combination of chicken & mushroom as well as truffle infused cheese, it's a little different from the usual carbonara but delicious nonetheless.
Chicken Mushroom Carbonara 
As a contrast to the "White" Chicken Mushroom Carbonara, the "Black" Asian-style Pork Belly Spaghetti is a pretty bold fusion delicacy, with a combination of the Asian Braised Pork Belly and Italian Spaghetti. In my opinion, I found it to be the more enjoyable dish out of the two :)

Churroffles! A combination of ice cream waffles and churros, pretty interesting concept, akin to waffles & ice cream but with churros as the waffle base with cinnamon sugar, i'd say its the best of both worlds! Hehe.
